It's a very old, typically Sardinian bread, of Arabian origin: made by hard corn flour, water, salt and leaven. The need for spending long periods far from their home for transumance, which was compulsory by the lack of fruitful ground, induced the old Sardinian people to toast this precious bread, to increase its preservation capacity.
